Red
The Château Saint-Esprit red “Quintessence” is a unique wine which reflects the great potential of our Terroir to produce great red wines in Provence.
A blend of old vines Syrah and Mourvedre, its elaboration takes more than two years between harvesting to its commercialisation. The yield is controlled to not exceed thirty-five hectolitres per hectare.
For a great aromatic extraction, a cold maceration with pigeage precedes the fermentation in open fermenters for three weeks. Then, a gentle extraction by pumping-over and a long maceration on skins ensure elegant and finest tannins. An aging of fourteen months in our best French new barrels aims at developing the spicy notes and a great complexity.
At degustation, this wine is characterised by its deepness and its elegance. The nose expresses a great harmony between liquorice and spicy notes.
The palate develops intense flavours of ripe fruits with also some chocolate and violet notes combined to a fine acidity and velvety tannins. It has a great and complex finish.
The “Quintessence” red is a subtle, beautifully structured wine of elegance and beauty which shows precision and a great longevity of 15 years – a hyphen between elegance, richness and complexity reflecting perfectly the Terroir of Provence.
This wine will match perfectly with roasted game, as well as a grilled grass feed Black Angus scotch fillet.

Rosé
Thanks to the symbiosis of this blend of Cinsault and Mourvedre, the Chateau Saint-Esprit Quintessence rosé is a refine and subtle wine. The oldest vines of the property are chosen for this wine and the grapes are carefully selected before being processed.
The yield is carefully controlled around 40 hectolitres per hectare harvesting unripen grapes in summer.
After a juices selection, the fermentation occurs in one vintage old French barrels with batonage (lees stirring) for eight months. Malolactic fermentation is blocked to keep the freshness and the fruity characters.
At degustation, the colour is bright pink with coral hints and the nose is ample and elegant with some stone fruits notes.
On the palate, the texture is buttery, rounded and well balanced with the fresh fruit aromas. Great length on subtle candy notes.
This wine is delicious young, but could age two to three years and will develop roasted dry fruits and fresh butter brioche aromas.
Made of a harmonious blend, it shows a great finesse and a subtle aromatic structure.
A great gastronomic rosé which will match beautifully Mediterranean dishes as well as a tuna or king fish sashimi.
